Cabernet Sauvignon
Cabernet Sauvignon is the variety that has helped establish Margaret River as one of the world's great wine regions. While Bordeaux is its spiritual home, Margaret River has earned an international reputation for producing Cabernet of remarkable elegance, structure and longevity.
The region's mild maritime climate, ancient gravelly loam soils and long, dry growing season provide ideal conditions for Cabernet Sauvignon. Warm days and cool nights allow the fruit to ripen slowly and evenly, developing intense flavour while retaining freshness and natural acidity.
The result is a distinctive style defined by vibrant blackcurrant and dark berry fruit, fine tannins and exceptional balance. It's a style that reflects both the unique character of Margaret River and why Cabernet Sauvignon remains the region's signature variety.
At Hay Shed Hill, our Cabernet Sauvignon is sourced from our mature Wilyabrup vineyard, where the combination of old vines and an exceptional site consistently produces wines of depth, elegance and outstanding ageing potential.
